Recipe: Mexican Rice – Arroz Mexicano
Ingredients
- 1/4 cup vegetable oil
- 1 clove garlic, minced
- 1/4 cup minced onion
- 1 cup uncooked long-grain rice
- 1 tomato, peeled and chopped
- 1 cup tomato juice
- 1 1/2 cups chicken stock or water
- 1/2 cup chopped bell pepper
- 1/4 cup chopped green chile
- Salt to Taste
Instructions
- Saute garlic and onion in vegetable oil until translucent.
- Stir in rice and allow to turn golden.
- Add remaining ingredients and mix well.
- Cover tightly and cook until rice is tender and liquid has been absorbed.
- Stir occasionally during the cooking.
