Recipe: Mexican Rice – Arroz Mexicano


  • 1/4 cup vegetable oil
  • 1 clove garlic, minced
  • 1/4 cup minced onion
  • 1 cup uncooked long-grain rice

  • 1 tomato, peeled and chopped
  • 1 cup tomato juice
  • 1 1/2 cups chicken stock or water
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped green chile
  • Salt to Taste


  1. Saute garlic and onion in vegetable oil until translucent.
  2. Stir in rice and allow to turn golden.
  3. Add remaining ingredients and mix well.
  4. Cover tightly and cook until rice is tender and liquid has been absorbed.
  5. Stir occasionally during the cooking.
