Recipe: Nogales Mexican Rice

Ingredients

  • 3 tablespoons oil
  • 1 clove garlic, chopped
  • 1 cup onion, chopped

  • 1 cup rice
  • 2 cups hot water
  • 2 chicken bouillon cubes
  • 1/4 to 1/2 cup tomato sauce
  • 1 cup chicken, cooked
  • 1 cup corn, canned salt, to taste
  • 1 tomato, chopped

Instructions

  1. Heat oil with garlic and onion.
  2. Add rice, cook in oil until it turns white, stirring constantly.
  3. Add water, bouillon cubes and tomato sauce.
  4. Bring to boil.
  5. Reduce heat to simmer, add chicken and corn.
  6. Season to taste with salt.
  7. Cook until most liquid is absorbed.
  8. Add tomato and heat through.
  9. Serves 6
