Ingredients
- 3 tablespoons oil
- 1 clove garlic, chopped
- 1 cup onion, chopped
- 1 cup rice
- 2 cups hot water
- 2 chicken bouillon cubes
- 1/4 to 1/2 cup tomato sauce
- 1 cup chicken, cooked
- 1 cup corn, canned salt, to taste
- 1 tomato, chopped
Instructions
- Heat oil with garlic and onion.
- Add rice, cook in oil until it turns white, stirring constantly.
- Add water, bouillon cubes and tomato sauce.
- Bring to boil.
- Reduce heat to simmer, add chicken and corn.
- Season to taste with salt.
- Cook until most liquid is absorbed.
- Add tomato and heat through.
- Serves 6
