Recipe: Southwestern Rice Bake

Ingredients
- l/2 cup frozen chopped onion
- 2 1/2 cups tomato juice
- 1/4 teaspoon pepper
- 1/2 cup chopped celery
- 2 1/2 cups packaged pre-cooked rice
- 2 tablespoons vegetable oil
- 1 package (1 pound) frankfurters
- 1 to 3 teaspoons chili powder
Instructions
- Sauté onion and celery lightly in oil in a large skillet; stir in chili powder and cook 2 minutes.
- Add tomato juice and pepper; bring to boiling; stir in rice; spoon into a 6-cup casserole.
- Cut each frankfurter into thirds and score; arrange on top of rice; cover.
- Bake in moderate oven (350°) 20 minutes, or until bubbly-hot.
