Recipe: Ranch Style Chicken Soup – Sopa Ranchera

Summary: You’ll never make a heartier, better tasting chicken soup than Sopa De Pollo a la Mexicana.


  • 1/4 cup chopped onion
  • 1 tablespoon cooking oil
  • 4 cups chicken broth
  • 1/4 cup long grain rice
  • 1/4 cup tomato puree
  • 1/4 teaspoon salt
  • Dash pepper
  • 1 cup frozen peas


  1. In saucepan cook onion in hot oil till tender but not brovvn.
  2. Stir in chicken broth, rice, tomato puree, salt, and pepper.
  3. Bring to boiling. Reduce heat; cover and simmer for 25 minutes.
  4. Stir in frozen peas; simmer, covered, 5 minutes longer.
