Recipe: Chicken Jalapeno Quesadilla
Ingredients
- 16 flour or corn tortillas
- 3 boneless, skinless chicken breasts, cooked and shredded
- 8 oz. Monterey Jack or mild Cheddar cheese, grated
- 1 jalapeno chile, chopped
- 1 onion, sliced in rings
- Your favorite salsa
Instructions
- Heat a heavy Silverstone nonstick saute pan until very hot.
- Lay a tortilla in hot pan.
- Place 1 ounce grated cheese, some shredded chicken, 1 onion ring and a few pieces of ]alapeno pepper on tortilla.
- Plaoe another tortilla on top.
- Cook on medium heat until cheese starts to melt.
- Turn on other side and cook 1 more minute.
- When cheese is completely melted, remove from heat and serve immediately.
- Cut into pie-shaped eights for appetizers.
- Serve salsa on side.
