Chicken Jalapeno Quesadillas

Recipe: Chicken Jalapeno Quesadilla


  • 16 flour or corn tortillas
  • 3 boneless, skinless chicken breasts, cooked and shredded

  • 8 oz. Monterey Jack or mild Cheddar cheese, grated
  • 1 jalapeno chile, chopped
  • 1 onion, sliced in rings
  • Your favorite salsa


  1. Heat a heavy Silverstone nonstick saute pan until very hot.
  2. Lay a tortilla in hot pan.
  3. Place 1 ounce grated cheese, some shredded chicken, 1 onion ring and a few pieces of ]alapeno pepper on tortilla.
  4. Plaoe another tortilla on top.
  5. Cook on medium heat until cheese starts to melt.
  6. Turn on other side and cook 1 more minute.
  7. When cheese is completely melted, remove from heat and serve immediately.
  8. Cut into pie-shaped eights for appetizers.
  9. Serve salsa on side.
