EZ Chicken Quesadillas

Recipe: EZ Chicken Quesadillas


  • 1 can cream of chicken soup

  • 1 1/2 cups cooked chicken, chopped
  • 1 cup cheddar cheese, shredded
  • 8 Flour tortillas (8 inches each)
  • Salsa, to serve
  • Sour cream, to serve


  1. In a small bowl, combine soup, chicken and 1/2 cup cheddar cheese.
  2. Top half of each tortilla with 1/4 cup soup mixture, spreading evenly to within 1/2 inch of edge.
  3. Moisten edges of tortillas with water; fold over, pressing edges to seal.
  4. Arrange filled tortillas on two large baking sheets.
  5. Bake at 400 degrees for 8 minutes.
  6. Remove from oven and sprinkle with remaining 1/2 cup cheese.
  7. Serve with salsa and sour cream.
  8. Serves 4
