Recipe: Mediterranean Cheese Quesadillas
Ingredients
- 8 (7-inch) flour tortillas
- 1 garlic clove, pressed
- 3 firm plum tomatoes, sliced
- 1/3 cup pitted ripe olives, sliced
- 1/4 cup loosely packed fresh basil leaves, snipped, or 4 teaspoons dried basil leaves
- 2 cups (8 ounces) shredded mozzarella cheese, divided
- 1/2 cup (3 ounces) crumbled feta cheese
- Olive or vegetable oil
Instructions
- Preheat oven to 425°F.
- Place 4 flour tortillas on 15″ Baking Stone.
- Using Garlic Press, press garlic over tortillas: spread evenly.
- Slice tomatoes thinly.
- Slice olives and snip basil leaves
- Sprinkle each tortilla with l/4 cup of the mozzarella cheese.
- Top with equal amounts of tomatoes, ripe olives, basil and feta cheese.
- Top each tortilla with 1/4 cup of the remaining mozzarella cheese and a second tortilla.
- Spray tops lightly with oil.
- Bake 8-10 minutes or until tops are lightly browned.
- Cool 5 minutes.
- Cut each quesadilla into 6 wedges using Pizza Cutter.
- Serve warm.
- Yield: 24 appetizers
