Ingredients
- 1/2 cup fresh basil, shredded
- 1 cup marinara sauce
- nonstick cooking spray
- 8 flour tortillas
- 1 cup cheddar cheese, grated
- 1 cup Monterey jack cheese, grated
- 4 tablespoons Parmesan cheese, grated
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 (4 ounce) can black olives, sliced
- Garnish: sour cream, warm marinara sauce, bell pepper slices
Instructions
- Stir fresh chopped basil into marinara sauce and heat in saucepan over low heat.
- Heat a skillet on medium heat; spray with nonstick cooking spray.
- Place 1 tortilla in skillet and top with 2 tablespoons marinara sauce, 1/4 cup cheddar, 1 tablespoon Parmesan, few slices bell peppers and few sliced olives.
- Sprinkle with 1/4 cup jack cheese.
- Place second tortilla on top of stack.
- Cover skillet with lid and cook until cheeses are melted.
- Slide out onto a cutting board and assemble second, third and fourth as described above.
- Allow each quesadilla to cool 2 to 3 minutes before cutting, to firm up cheese.
- Cut into wedges.
- Serve wtih garnishes as desired.
