Recipe: Turkey Fiesta Soft Tacos
Ingredients
- 12 corn tortillas
- 3 cups diced, cooked turkey
- 1 clove garlic, minced
- 1/2 cup light beer or tomato sauce
- 1 small onion minced
- Pinch of dried oregano
- 2 Tbsp. water
- 1 tsp. cumin seed
- Minced jalapeno peppers, sliced tomatoes and shredded iceberg lettuce (optional toppings)
Instructions
- Coat a large nonstick skillet or electric frying pan with cooking spray.
- Add onion, garlic and water.
- Cook and stir over high heat until water evaporates and onion begins to brown.
- Stir in turkey, beer, cumin and oregano.
- Simmer, uncovered, stirring often, until most of the liquid evaporates (about 10 minutes).
- Meanwhile, gently heat tortillas a few at a time, in a nonstick skillet over moderate heat for about 20 seconds on each side.
- Spoon turkey mixture into soft tortillas and roll.
- Top with chopped jalapeno peppers, sliced tomatoes and shredded lettuce, if desired.
- Makes 12 tacos.
