Recipe: Black Bean Salsa Salad
Ingredients
- 2 cans black beans, drained
- 2 cups kernel corn
- 1 yellow bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium red onion, chopped
- 2 large Roma tomatoes, seeded, chopped
- 3/4 cup fresh cilantro, chopped
- 1/3 cup fresh parsley, chopped
- 2 fresh jalapeno peppers, seeded, chopped
- 2 cloves garlic, minced
- 2 to 3 tablespoons lime juice, to taste
- 1 to 2 tablespoons ground cumin, to taste
- 1 tablespoon sugar
- 1 teaspoon salt
- Pepper, to taste
- 1 teaspoon dried oregano
- Garnish: shredded lettuce, tortilla chips, lime wedges
Instructions
- Toss the first 8 ingredients together in large bowl.
- Stir remaining ingredients together and pour over bean mixture to coat.
- Serve over shredded lettuce with tortillas.
- Garnish with lime wedges.
