Recipe: Black Bean Salsa Salad

Ingredients

  • 2 cans black beans, drained

  • 2 cups kernel corn
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium red onion, chopped
  • 2 large Roma tomatoes, seeded, chopped
  • 3/4 cup fresh cilantro, chopped
  • 1/3 cup fresh parsley, chopped
  • 2 fresh jalapeno peppers, seeded, chopped
  • 2 cloves garlic, minced
  • 2 to 3 tablespoons lime juice, to taste
  • 1 to 2 tablespoons ground cumin, to taste
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Pepper, to taste
  • 1 teaspoon dried oregano
  • Garnish: shredded lettuce, tortilla chips, lime wedges

Instructions

  1. Toss the first 8 ingredients together in large bowl.
  2. Stir remaining ingredients together and pour over bean mixture to coat.
  3. Serve over shredded lettuce with tortillas.
  4. Garnish with lime wedges.
