Recipe: Rancho Taco Chicken Salad
Ingredients
- 1 tablespoon oil
- 1 pound boneless, skinless chicken breast halves
- 1/2 package taco seasoning
- 1 package salad greens or use 1 head of lettuce, chopped
- 1 cup salsa
- 1 cup ranch dressing
- 1 to 1-1/2 cups cheddar cheese, shredded
- Garnish: crushed tortilla chips
Instructions
- Heat oil in skillet over medium heat.
- Cut chicken into bite-sized pieces and season with taco seasoning.
- Saute in oil about 8 minutes, or until cooked through.
- In large bowl, toss greens with chicken, salsa, ranch dressing, and cheese.
- Sprinkle with crushed chips before serving.
