Recipe: Southwest Taco Salad


  • 1 head iceberg lettuce
  • 1/2 pound ground beef

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 package corn tortilla chips
  • 1/2 pound cheddar cheese, shredded
  • 1/2 red onion, sliced finely
  • 1/2 basket cherry tomatoes, cut in halves
  • 1(15 ounce) can kidney beans, drained and chilled avocado, peeled and cubed (optional)
  • Ranch dressing or salsa mixed with sour cream


  1. Wash and core lettuce; chill.
  2. Brown ground beef with seasonings and drain fat.
  3. Crush tortilla chips.
  4. Reserving several large leaves for garnish, tear remaining lettuce into bite-sized pieces.
  5. Toss all ingredients with dressing.
  6. Garnish with lettuce leaves.
  7. Serve with Salsa if desired
  8. Serves 4 – 6
