Recipe: Mexican Tamale Pie

  • 1 pound ground turkey
  • 1 cup stoneground cornmeal
  • 1 small green pepper, chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2-8-oz. cans (2 cups) tomato sauce
  • 2 cups corn, frozen or fresh
  • 2.25-oz. can sliced ripe olives, drained (optional)
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon butter


  1. Season and brown 1 lb. ground turkey
  2. When turkey is about half browned, add and sauté until

  3. turkey is cooked:
  4. 1 small green pepper, chopped
  5. 1 small onion, chopped
  6. 1 clove garlic, minced
  7. Lower heat and blend in:
  8. 2-8-oz. cans (2 cups) tomato sauce
  9. 2 cups corn, frozen or fresh
  10. 2.25-oz. can sliced ripe olives, drained (optional)
  11. 1 1/2 teaspoons chili powder
  12. 1/2 teaspoon salt
  13. Pour hot mixture into 9″ square baking pan or 2-quart casserole dish
  14. For topping bring to boil in saucepan:
  15. 1 cup water
  16. 1/2 teaspoon salt
  17. 1 tablespoon butter
  18. In separate bowl blend cornmeal into a second cup of water:
  19. 1 cup cold water
  20. 1 cup stoneground cornmeal
  21. Gradually stir cold water~cornmeal mixture into boiling water, stirring to thicken, about 2 minutes.
  22. Spread cooked cornmeal mixture evenly to edges over top of casserole.
  23. Bake uncovered for 50-60 minutes at 350° or until crust is done (lightly crisp and golden brown).
