Recipe: Black Bean Tostado

Summary: This Mexican tostado recipe is crunchy and good. The black beans make the difference.

Ingredients

  • Rosarita refried low fat black bean 1 cup

  • Turkey, Ground turkey, 93% lean, 4 oz
  • Athenos Reduced Fat Feta Cheese, 1 oz
  • Pace Chunky Salsa – Mild, 8 tbsp
  • Romaine Lettuce 1 cup, shredded
  • Onions, raw, 1/2 cup, sliced and sauteed
  • 2 Medium Corn Tortillas

Instructions

  1. Cook ground turkey and onions in skillet until done.
  2. Drain.
  3. Cook tortillas in olive oil in a skillet until tortilla is crisp.
  4. Heat bean on stove or microwave.
  5. Equally spread beans, meat, feta cheese, lettuce then, salsa (in that order) on two tortillas.
