Recipe: Black Bean Tostado
Summary: This Mexican tostado recipe is crunchy and good. The black beans make the difference.
Ingredients
- Rosarita refried low fat black bean 1 cup
- Turkey, Ground turkey, 93% lean, 4 oz
- Athenos Reduced Fat Feta Cheese, 1 oz
- Pace Chunky Salsa – Mild, 8 tbsp
- Romaine Lettuce 1 cup, shredded
- Onions, raw, 1/2 cup, sliced and sauteed
- 2 Medium Corn Tortillas
Instructions
- Cook ground turkey and onions in skillet until done.
- Drain.
- Cook tortillas in olive oil in a skillet until tortilla is crisp.
- Heat bean on stove or microwave.
- Equally spread beans, meat, feta cheese, lettuce then, salsa (in that order) on two tortillas.
