Recipe: Crab Tostadas – Tostadas de Jaiba

Ingredients
- Cooking oil
- 8 6-inch tortillas
- 1 tablespoon lime juice
- 1 tablespoon olive or cooking oil
- 1/4 teaspoon salt
- Dash pepper
- 1 7 1/2-ounce can crab meat, drained, flaked, and cartilage removed
- 2 canned green chili peppers, rinsed, seeded, and chopped
- 1 small avocado
- 2 cups shredded lettuce
- 1 tomato, chopped and drained
- Lime wedges
- Bottled hot pepper sauce
Instructions
- Fry tortillas, one at a time, in hot oil for 20 to 40 seconds on each side or till crisp and golden.
- Drain on paper toweling.
- Keep warm in toil in 250° oven.
- Mix together lime juice, the 1 tablespoon oil, the salt, and pepper.
- Toss with crab and chili peppers.
- Divide mixture among tortillas.
- Seed, peel, and cube avocado.
- Top crab and peppers with lettuce, tomato, and avocado.
- Pass lime wedges and hot pepper sauce.
