Ingredients
- 1 tablespoon safflower oil
- 1/2 onion, sliced
- 1 pound potatoes, unpeeled and finely sliced
- 1/2 cup water
- 1 egg
- 6 egg whites
- Black pepper to taste
- 1/2 teaspoon minced, fresh thyme or 1/4 teaspoon dried
- 1 teaspoon minced fresh basil or 1/2 teaspoon dried
Instructions
- Heat the oil in a cast iron or nonstick skillet.
- Saute the onion and potatoes for about 5 minutes until lightly browned, stirring occasionally.
- Stir in water, cover, and cook on low heat for 10 minutes or until potatoes are tender.
- Sprinkle with pepper, thyme and basil.
- Beat eggs together in a blender for one minute.
- Pour eggs over potatoes, pat down firmly, cover and cook until set (5-10 minutes).
- Brown under the broiler and cut into 4 pieces and serve.
- Serve with picante or fresh pica de gallo.
