Recipe: Huevas Con Papas

  • 1 tablespoon safflower oil
  • 1/2 onion, sliced
  • 1 pound potatoes, unpeeled and finely sliced

  • 1/2 cup water
  • 1 egg
  • 6 egg whites
  • Black pepper to taste
  • 1/2 teaspoon minced, fresh thyme or 1/4 teaspoon dried
  • 1 teaspoon minced fresh basil or 1/2 teaspoon dried


  1. Heat the oil in a cast iron or nonstick skillet.
  2. Saute the onion and potatoes for about 5 minutes until lightly browned, stirring occasionally.
  3. Stir in water, cover, and cook on low heat for 10 minutes or until potatoes are tender.
  4. Sprinkle with pepper, thyme and basil.
  5. Beat eggs together in a blender for one minute.
  6. Pour eggs over potatoes, pat down firmly, cover and cook until set (5-10 minutes).
  7. Brown under the broiler and cut into 4 pieces and serve.
  8. Serve with picante or fresh pica de gallo.
