Recipe: Vegetarian Breakfast Tacos

Summary: A Zesty Morning Wake-Up Call!


  • 2 egg whites

  • 1 tablespoon skim milk
  • 2 tablespoons chopped onion
  • 2 tablespoons red or chopped green pepper
  • 1/2 teaspoon cumin
  • 1 whole wheat flour torilla
  • Bottled picante sauce or pico de gallo (1-2 tablespoons)


  1. Saute onion, pepper and cumin in nonstick pan coated with vegetable coating spray.
  2. Beat egg whites and milk in blender for one minute.
  3. Add to skillet, stirring to mix with vegetables.
  4. Cook until eggs are set.
  5. Place in warm whole wheat tortilla and roll up.
  6. Add picante or pico de gallo to taste.
  7. Servings: 1
